Frankenstein and 1984 would be good places to start!

Ooo Jane Austen and Agatha Christie are great starting authors in my opinion (also the subject matter isn’t so depressing compared to some others), 1984, To Kill A Mockingbird, Of Mice and Men, Great Gatsby and Handmaids Tale are much more modern classics so those might be a bit easier to read as well (they are also regularly read in high schools and colleges, so there are lots of papers on them, Frankenstein is also an great read (tho it’s a bit more confusing and significantly more depressing)

    Huckleberry Finn, Great Expectations

Others, but I’m not sure if they’re easy, per se:
    A Tale of Two Cities
    The Count of Montecristo

Little women by Louisa May Alcott

Classic to the core, it's very light and about daily lives of 4 sisters in 18th century
