Maybe it's because she notices that Arwin has some type of interest in Latte, but Ibelin wants the love interests atttention only on her. Would also explain why Ibelin was suddenly great at dancing. Arwin could proabaly tell she was being over the top to get both the prince's and Arwin's attention.

After debating with other, I came to the conclusion that she is possessive toward both Latte and the fishes because she wants them all focuse on her.
