Because if he had the brain cells to remember his family in the first 15 chapters then we'd already have the climax of the story leading to him accepting his new life yada yada and that wouldn't be good

It's most likely because of the combination of shock and awe to all the different stimulus he was presented has greatly distracted him from stuff e.g. the unusual creatures such as Titans and his "poisoning" with the Raisa fruit, or was it the Carina.
