It's a title you get as a knight. Whether you're male or female, once you're a knight, or maybe one of high standing you're given the title "sir".
They were addressed as he too.
Also other characters are called dame and other feminine titles so I don’t get why that would change

No need for the sass whoever you are. My so called knowledge may be wrong but it's not out of complete ignorance. Many of the manwhas I've read use the title sir for their fl knights regardless if they know the gender. Following that line of thought, I believed it to be the norm.
