umm sorry just saw this and I immediately looked for the closest chapter I remember where I read jiminy, but unfortunately, the translated version in mangago is different and didn't display that word...cuz i normally read in Line Webtoons...it is found on chapter 160 around page 27
but thanks anyway, it is close to the description as you said
in mangago, instead of "jiminy" it's translated as "what are you"?! as an expression of surprise
