Gap moe is the difference between how one looks (and looks they should be), and how they actually are, personality-wise. Like, some guy who's huge and looks like the toughest, meanest yakuza gangster with a rap sheet a mile long, but he's actually a super sweet, shy florist with a soft spot for puppies. That sort of thing.
