I'm convinced this guy was parte of the cult that kidnapped the Phantomhive boys. 1-he only calls Sebastian "demon", so he knows his nature but not his name 2-he talks about Sebastian taking everything from him that night. So they parted ways one night, and Sebastian robbed him of everything. Sebastian killed all cult members, which probably ended the cult. If this guy was there,he lost all his allies and connections, as well his chance of making a pact with a demon 3-he cuts himself to trigger Sebastian's memory. At first I thought he mistook sebby for a vampire,but maybe he wanted to remind Sebastian of himself covered in blood after Sebastian tried to kill him Anyway, that's my theory
he might be a demon worshipper without being part of that cult. since he cuts himself, sebastian probably led him into sacrificing himself or he sacrificed someone important to him but sebastian cheated him out of the contract

I thought real Ciel was just a reanimated corpse, that's why Undertaker worked on creating them for so long.
