I believe it's the stereotype they're going with. Like all omega's are petite and pretty but I've seen some hot beefy ones that make me bark.
Japan does that with their ABO stories. Alphas are supposed to be the peak of human perfection, whereas Korea humanizes them much more by making them more bumbling.

They always describe alphas to be exceptionally intelligent but then why in most stories all alphas are just arrogant dumbasses??
