I agree that the pacing is off but he did know her name at that point since she was a regular. At the beginning of that chapter he calls her name out of shock when she comes in because it isn't her regular day.

The pacing of this story was actually wild ngl. One moment she was in a restaurant to enjoy some good food then suddenly the owners trying to figure out if they’re sexually compatible without even knowing her name
