I feel you! I love Chapter 0. It was perfect.
Also a long boring rant by me and it's my OWN opinion. So you are more than welcome to IGNORE it but I think some beginner manga artist and their Chapter 0 is like an attention grabber for the audience. If it gets popularized. The editor or publisher or whoever in charge will agree it to become a series. Then the artist might have to start changing some bits of the setting/plot and the plannings for a continuation. And that's how I assume the official Chapter One came to be. But I don't know.
Take 'Hungry Joker' as an example. It started off with a one shot then became a series and got axed. Although, on Mangago, Ch. 0 is kind of all over the place and Ch.1 is not there.
