I think it is more of a figurative sense. It is the person they want to be with for their rest of their lives up until the moment the human gives their heart to the vampire which means death for both of them.

Wait so is the [heart] the vampire’s destined one, or literally just any random human that they can choose to give their heart to?
I thought it was something like a soulmate what with Hisato saying they’re not the right one etc.
But Roche gave his heart to a human who he hated/was evil- so...? Did he just plant it in...?
