Haha so as you said these type of manga are pretty rare, so much so that when I looked through all the manga I read on this site (but I missed out a ton cus I use a few other sites as well) I couldn't find anything with the same sort of vibe. They either had romance as a main theme, little to no plot or were dark psychologicals or something.
I put a few down that felt somewhat similar. The last four (imo) are the closest, had a good amount of plot and progression with little romance and lots of fluff! If you want a summary on any of them just give a shout!

You definitely have to try natsume book of friend (anime or manga)there are some dark moments but they’re always meaningful and definitely a lot of wholesome moments. Honestly natsume is such a wholesome person who just tries his best in every relationship he encounters :”3
Cute! I know a lot of ppl want romance but I love these sort of wholesome manga that do try and complicate relationships. The art is amazing too
