This is such a fascinating genre! I was such a sceptic at first, like who wants to read a book about a character becoming a monster (say a spider?) but wow I was so impressed that it made me want to find others just like it!
So this list is exclusively composed of characters who were human and suddenly become monsters (through reincarnation or through some other external force!)
