No, it's not supposed to be him projecting. Gyeol's upset because he saw the state Mr. Kim's "art" leaves Yeseung and how dangerous the things he gets up to for his boss are, so Gyeol doesn't understand why would Yeseung agree to that.
Regarding his dreams, it's implied that those were not fantasies Gyeol usually has, they started after he met Yeseung, that's why Gyeol himself was shocked by the dreams and even called himself a "pervert" or "weird" a few times. He's not really into that kind of stuff normally.
