I think this manga teaches us that intimacy can come in many different shapes and forms. For instance our MC is deaf/mute but she her "words" can reach people's hearts. Her and the ML's relationship feels more intimate than one that is just physically intimate couple (like the hairstylist with his casual flings). I personally think being able to understand each other, bond with their friends and family, and communicate is truly more valuable than intercourse.
Now the reason why they move in before being physically intimate is because of the time factor. Our ML is working towards going abroad and they only have some much time together. I think it's valid to increase the time they have together by moving in. Like I said earlier, they're connected on a much deeper level than just sex.
