Im from Mexico, we have birria which is beef marinated and cooked in a mix of like 4 different chiles and oregano, clove, and star anise (i think that's what theyre called.) The beef is usually prepared in an oven within the ground and its buried usually over night. Thanks to this, its INCREDIBLY soft and juicy. Quesabirrias got really popular late......   reply

I'm Filipino and love soups, and one of my all time fave is CANSI. a soft fall off the bone Beef soup with young jackfruit and batuan for that sourness and a kick of chili on the side. oooooohhhh and the marrow that's just lovely... thinking about it is juuust SALIVATING!!!   reply

my favorite food from Iran is called "Ghorme Sabzi". it's a stew made with several herbs, meat, beans .... it is severd with rice and is so yummy. it should simmer for at least 3 hours for the different tastes to harmonize.   reply
