I think there are a lot of "reasons" behind it, but obviously the reasons are still super harmful to bisexual people. 1. People see sexuality as black and white because it feels easier that way. I somewhat think that it's because they think it's just a fasse and that the only reason why a bi woman would date a lesbian is because they would want to experience it and vicversa.
