I recommend doing some still lives as a practice, it essentially will follow the same concept as trying to recreate someone’s artstyle. Cause both will still have you working on your observation skills
Shading does half the work. Also your drawing looks less like the og because the trapezus muscles you drew needs to be more defined / anatomically correct. Also, your eyes are pointed upward instead of neutral. The dudes checks are more subtle than the pointy ones you have, softening it will help elongate his face.
I think the first thing is observation. You need to take in all the facial features of the character and then try recreating them, albeit in your own artstyle. What angle their eyes, eyebrows, nose, lips, jaw, etc. slant at. How wide/narrow different parts of their face are, things like that. Miss this step and the final product will look more like an OC than fanart.
