She knows that the mc is a girl since their first meeting because i keep wondering why would she like someone she first met when and base from her character profile she is not someone who is romantic rather she is calculating, freewilled and stuborn. So thinking that she knew from the start and danced with the mc actually connects the dots. Based from my speculation she suspected that the mc is a girl and tried to remove her from the clutches of the prince while acting that she liked the mc and she danced with the mc to confirm her thoughts and also given her the warning to help the mc survive learning that the mc had situations from the rumors. So it actually makes sense. The mc actually had androgynous face and small frame, she might not used to speak a lot due to her personality but if others would see her it would arouse suspicions.
This is aside of course women's intuition. Women have very strong perceptive powers i don't know but they are highly perceptive to their environment and the people.
