In those kind of competitions the judges always spit it out, because if not they get drunk before the end of the competition.
But is true, if they spit it out too soon they can't taste the drink very well.

I was really pissed off one of the judges in that competition just straight up spit out daiki's entry, but (aside from what they said about a flavor change) i got the idea that the drink leans more toward a bitter flavor, because it's inspired by a love of two people in two completely different worlds and that love is bound to come with hardships and obstacles. Shame he didnt win, but im glad he got an award!
I also wish that owner treated the subordinate guy a bit better. That guy was cute. Hope he has his own story.
