Hestia is perhaps the most realistic portrayal of a person transmigrating. The psychological aspects, the depression, and the sense of living solely for Kael, without whom Hestia feels she has no purpose in this world

absolutely edith is realistic, and i feel like even tho its not realistic transmigration, its the most realistic-ish reaction to the life over in "rofan-land" is ruby from the way to get my husband on my side

Let's not forget Latte Ectrie from miss not-so-sidekick. The world and story building is so unrealistic, slapstick, and eccentric that we don't get a moment of clarity until the end. Revealing she was actually a realistic portrayal as well who was compartmentalizing and coping to an extreme

Edith is realistic but not when it comes to transmigration, more in the life aspect and dealing with it the best way possible, a very resilient character.
But there are very few isekai, from what I know, that go in depth about the whole transmigration concept. I wish more authors would explore it. Imagine literally being trapped in a novel, I would go mad.

for me, kill the villainess is more realistic. MC really did her best to go back to her world and her initial reactions after getting isekai'd was so relatable
