i’m not too sure since i’m going off novel spoilers i read before in the comments, and i guess she ran away at some point which led him go wild goose chase trying to find her and that’s when he meets her sister, i think?

It's because of her fear of being killed. The butler was trying to kill paula without Vincent's notice and the head maid helped her escape, the reason why—Vincent thinks she ran away bcs she doesn't trust him.
