Season one is basically about Ian meeting Sol and his country. Season two is the back story about Sol and Brian (Ian in his past life) and how Brian died, and well uk what season three is about. So I'd say it doesn't matter. You'll just know the backstory first.
I read both a long time ago, and now I think I'm going to read season 2 first, then 1, because that way, you feel like you understand everything better and in the right order. When you know their past lives you can understand better Sol behavior and why he is so smitten of Brian
I read this till the middle of season 2 and paused till the season ended, but now I realize I forgot everything Does it matter if I go from S2 -> S1 -> S3?
Cuz the first time I will admit didn't care much about the flashback at all. So I'm thinking if I start from S2 I'll read the flashback more thoroughly and I'll still be able to understand the plot
