Why would she end up in jail?
1 -transferring a heart that was meant for Lynn's to another patient by faking some test results,
2 -faking even more test results,
3 -simply refusing to get a heart for Lynn,
4 -raping Mel.
1-3 are all life threatening crimes against a patient in serious condition and those only can put her to jail to the rest of her life. If those can't be proved somehow, the rape can be because we have a victim (BDSM leaves marks on the body and there's also mental trauma which can be diagnosed by specialists), a witness and I'm sure there's a copy of that contract Lynn signed with her which is the main reason for the rape to even happen - Sue needed Mel broken to the point of no easy repair so she would be easy to get threatened and would let herself get raped instead of going to the police to put charges against her. Sue knew Mel would even give up her own life if it could save Lynn and make her happy (she'd gladly be her donor) so using Lynn's condition and need of a heart to force Mel into being her sex slave was the perfect solution.
Yeah, I doubt they can prove one to three and honestly at this point Mel's so desperate I doubt she even had any sense to write up some sort of contract. I just don't see it happening.
Also, rapists are rarely charged, and female rapists and cases of same sex rape are often dismissed altogether. I also can't picture Mel caring enough to sue.

Only if you can't prove it. Olivia would be the key in the trial. She's a witness. If she could tell what she saw and marks on Mel's body would prove she's telling the truth, that'd be enough to put Sue into jail for rape and if the contract Sue made with Lynn can't be used as a proof in the case of refusing heart then charging her with rape has bigger chances to succeed.
