TL;DR its the same pronunciation either way さとう(Satō). Source: I am a JLPT N4 passer
さ hiragana for "sa", と hiragana "to", う hiragana for "u" and is usually added to elongate the "o" or "u" sound. since sato ends with o, it elongates the o sound but technically speaking, the hiragana means u.

WHY DOES THE ANIME NAME SAY SATOO INSTEAD OF SATOU? IT SOUNDS SO AWKWARD >.< But overall i love the anime <3
