The original lady with the lamp is Florence Nightingale, she's a nurse that carries lamp in the dark hallways to aid soldiers during the Crimean war. So its like the same concept of what Elise wants to do to the people in need. Hope that answers your confusion (=・ω・=)
I think that's because our mama (I'm s nurse) Florence Nightingale used to carry along a lamp when checking the patients during night. It symbolize caring.
