I can admit a lot of manga do have that same plot line but popular mangas these days are popular for a reason, most of them have their own stories and own unique characters and a lot of the time a manga will seem one way when it’s another. What I’m trying to say is maybe you’re reading the wrong mangas? (=・ω・=)
It's not just yaoi, nearly all romance stories go this way. It is the romcom trope started by Jane Austen with Pride and Prejudice.
Girl meets boy, girl hates boy, drama happens, they date, more drama, separation, more drama, they get married.
If there was no conflict there would be no drama and thus we would get a oneshot or a few chapters worth of a story.
