At this point I'm honestly not surprised with Taehan's reaction. Like, imagine yourself with someone who you're getting feelings for and more than once said person vehemently rejects you, apologizes, and then keeps coming back only to repeat the cycle. It gets tiring. I'm sure Taehan is tired, obvs his feelings are hurt too.
While I'm sure this is all overwhelming for Doyun is as well, he did all of a sudden become a full-fledged Omega overnight, he needs to realize that people aren't going to always be forgiving his situation. While Taehan is an Alpha he's a human being first. One more rejection and Taehan might just say "fuck it" and not have anything to do with Doyun anymore.
Of course, they're going to be the endgame couple for this webtoon but I hope that this cycle doesn't keep happening.
