Well, it’s her personnality, I guess it must be hard to act in a way she’s not used to. I mean, in some situations, your personality will comes out unconsciously (like when you let yourself go by your feelings, be it by surprise, embarrassment, anger or whatever)
I agree that her LIFE is in danger, so she should try harder, but it’s still kind of realistic that she’s acting like that.
And for her hair, don’t forget that she’s only pretending to be her brother, and as we saw on chapter 1, her brother have long hair. So, she can’t cut her hair, because the important thing is, yeah, to look like a boy, but more than that, to look like her brother.
