Yeah I never understood that either, and In the show he never ate his face but at the end it showed his face eaten then Kaneki started blaming himself so honestly none of it makes sense , the show or manga
Kaneki was bleeding out and hide was just like if you bite me it won't be gay so go ahead so kaneki would heal :)
