I’d get it if she wanted to look older first and then become a vampire
So, from what I understand in the history of this world, humans cannot turn into vampires. Vampires are born that way. The female character could before because she was not from this world and for that reason she had not been "blessed" by the God of Light (I don't know if those are the right terms). But when the priest purified her there, she now became like the human being of that world. That is why she can no longer become a vampire.
This is what I understood, I may be wrong

I went to reread the comic to be sure and I don't think I was wrong hahah Chapter 8, 32 and 36 (this last one is basically a summary) explains all that I said earlier
