The real definition of simping doesn't really matter because it isn't used that way. pretty much it just is another way of saying that you're obsessed/attracted to a character/person.
But if you're curious about what it actually means, its along the lines of letting a woman(Its been changed for all genders but it used to be just men towards women) take over your mind and let you do things for them that you wouldn't normally do.
