The problem wasn't that the served him pork, but served him meat that wasn't prepared/killed in the method that was correct in their religion. Yet he acted as they knew about that and did that to offend him or smth and threw a tantrum. Also, you have to consider, that they were living in different times - nowadays we can just research all this information, but it was different for them. Lady Arial did a good job, it's just that she was lacking critical information. It's not like Lady Rachel wouldn't make the same mistake without Marie.
