Thanks to the princess emil is under a spell from a witch to like her. She hates Estelle because her family is obsessed with her. So it's her revenge. Even though that not her fault (〜￣△￣)〜

The other spoiler I read (from one of the comments here) Emil was going to act to like princess trash because he found a hint about their plans against Estelle’s family. And Estelle was left in the dark as usual and will get her 2nd heart break or some sort. Based on that, Emil was perfectly sane and was not under any spell. Ahh but I don’t know which version is true or if yours and their’s are related.
