Maybe the reason why the humans doesn't change in the deities' eyes is because they lived their lives longer than humans. So long that a hundred years for a human is only but a split-second in their eyes. Humans change as time goes on, they change countless times. These changes are so minimal and gradual that even they themselves do not notice the difference of their yesterday selves, today and tomorrow. Their changes happen too fast that their lives only felt like a passing breeze the deities' would not even notice the difference in the wind.
There are billions of people living in the world. Counting all souls that has ever lived on earth then there's probably more than billions of lives tied with fate. And I think that, if fate is responsible for people's journey in life then fate is lacking in genres, ideas, imagination, originality and is full of damn clichés because if the humans' lives are written and driven by fate maybe it's also the reason why the humans remains unchanging in their eyes. Just like a movie that's already been released decades back. Someone will recreate that same movie with the same script with a new cast in every passing decade.

Well, yeah, thinking about it in a realistic standpoint it's indeed because of the plot. As you've mentioned this is already a cliché, we've seen it as frequent as we did.
