Maybe it's because I haven't read it in a while, but when was revealed that she had blonde hair? Wasn't that her mother? Didn't she inheret red hair from her father?

You see she has blonde hair as a baby, both parents are blonde and also when our ML sees her one night on the stairs in the moonlight her hair is also blonde

Then, as to why her mother made her dye her hair, it could be to hide her identity as a Hogan, maybe? Or maybe there's someone after her, like that "thing" that doesn't feel human at all, the one that was in front of her uncle's house. It could be someone who knows her appearence and power, and this may also be why her uncle sealed her powers.

Although to be honest, I like Kate's hair red! (=・ω・=)

I'm not too sure myself but my best guess is that its bc Enoch sealed her powers away. That mightve caused some change and her hair turned red. Idk just a random guess lolol
