I don't really find it weird. He wasn't just meeting Sunwoo, it was a family get together, and I think he took it off because of his mom and stepdad. He didn't want his mom to know, but wearing a ring would definitely raise questions. There was that one part at the end of the scene where he's saying goodbye to his mom and she asks him how it's going with Hyunjin and says they could meet up with just the 3 of them. MC then wondered if she already knew and if she was waiting for him to tell her himself.
