This is gonna get really long, but I don’t think you’re understanding the story. It was her wish to die. He knew that his sins couldn’t ever be forgiven, so he gave her one of her final wishes to try and ease her pain. He couldn’t have saved her parents, either.
You need to consider the time zone the story is set in. Her family were placed in a position of power and trusted to fairly oversee the population. Instead, they exploited their people’s taxes for their own selfish benefit and forced them into poverty. Hundreds, perhaps even thousands, of people would have lost their homes due to her family’s greed and would’ve been forced onto the streets with children because of them.
And, ultimately, after a lifetime of endurement, they revolted against the fief for revenge. Even if Kaid was the head of the revolt, he had to choose between either letting her selfish family get away with exploitation of their people and their position or exacting revenge for the welfare of their people so they wouldn’t have to suffer anymore.
Kaid had a really hard decision to make and his intention was to keep her alive, but her wish was to die alongside her family. He wanted to give her whatever mercy he could, to keep her safe and alive, but he felt that he owed her some kind of collateral for the deaths of her family. And that was his collateral of her own choosing—death.

The guillotine was actually the most popular execution method around the time this manga was set in. Its purpose was to offer a more humane execution due to the blade being so sharp and rapid that it was almost painless. It would only have made sense to offer her this method, as any other possible kinder ways of death could have him under the accusation of harbouring feelings for her to which he could also be persecuted or looked down upon for.
I’m not quite sure about his passive expression when watching her die, but I’m sure it was to conceal the fact that he was actually extremely upset over her death and wanted to avoid suspicion. Honestly, I completely agree that what he did was wrong, but there really was no kinder or easier way he could’ve gone about the whole thing. Also, I think that anyone could live on under the right circumstances, but if you remember at the beginning, she was under the belief that she had committed a grave sin and was willing to spend the rest of her life in the monastery serving God as a nun for her punishment. Even if she had lived in her first life, I honestly believe she would’ve either killed herself or subjected herself to the same fate as a nun.
It was also the proper way about it, though. Everyone wanted the fief family dead for their crimes and, even if she was innocent, she wasn’t in the people’s eyes. It’s true that they could’ve faked her death, but honestly, like I said a little earlier, I think she would have either killed herself or subjected herself to a life as a nun. I’m sure I’d rather be dead than feeling alone and blaming myself every day for the deaths and selfishness of my family.
I’m sure he knows that what he did was wrong. That’s why his reaction was suicide if he were ever to trick another person in the same way, and also why he immediately lowered his head when he realised what she was talking about regarding buying final gifts to lay her family to rest. Yes, he is still in the wrong, but I really don’t agree that she’d be fine living on. Even if she was innocent and sheltered, no one would want to live after watching their family die and finding out everything you’ve ever known about your lover and your family was a lie. There’s no coming back from something like that. She would’ve been traumatised.
I think she’s so forgiving when it comes to him because she understands that the fault not only lies in him, but her family. It makes sense why she’s apologising for loving them even though they were so selfish because they made hundreds to thousands of people suffer because of their greed. I like your way of thinking, but it is a little bit naïve. If the rabbit wants to die, it’s not really a matter of it being alright to let it die. The rabbit’s wish should be taken into account as well as others’ wishes, and the rabbit should be allowed to die.
