Probably because a servant is easier yo get rid of than a friend. I honestly can't think of her thinking like a mother.
I personaly think it's more like a pride thing. At least that's how it comes off to me but I also can't think very higly of her attitude.

She & husband are the one pushed their kid to behave as servant for their own sake to begin with.. So I can't think of her in that positive way.

For instance, he said Jesse chose him especially when they first met, picked him out of the crowd ("hey blondie"), but now we see it was Mr. Chester who introduced him to Jesse in the flashback so it's possible that he was imagining him doing but it's actually him being done.
