She's literally a victim of abuse, her whole childhood was ruined, she was forced to act matured in her young age, she's locked up, her whole life she's being controlled, so it's not even weird if she act childish, if she acts without thinking about the consequences, if she feels free, if she doesn't set boundaries, her past alone is already a valid reason why she's like that.
About the fl and the priest, there are a lot of different ways to set boundaries, and she did set one, she stand by her words that the priest and her are just friends, best friends to be exact. It's the priest fault for being so touchy with her and fall for her, he already has a malicious intent from the fl at the start, his intention just backfired.
