Problem is that he was abused way past his childhood and is still not in a healthy environment so he’s fully conditioned to respond in an extremely submissive fashion to his trauma triggers. Jace is a major trauma trigger and extremely aggressive, so Eric basically has a panic attack, freaks out, and reverts to his previous state of basically becoming Jace’s sex slave again. It shows later how Jace also knows how Eric can’t handle yelling and conflict, becoming completely submissive, and he abuses this. I’m actually super surprised that Eric is able to snap out of it after a week (love worked!) and really happy that he happened to find a good partner in Avery (since he’s literally a master at communication and compassion).
