Adoption is a common way for gay people to be legally bound together if their country has no gay marriage. Not everyone can be as fortunate to have that right.
For example if an emergency happens and only family is allowed to visit or make decisions, even if they have been together for several years, some establishments will not honor your relationship unless there is a legal document saying so.
So adoption has been the substitute to gay marriage in most countries withput gay marriage.
