I think the mirror was create to hold back the immortal power so they don’t take over the earth but since the mirror got destroyed what’s left of it is too weak to hold back all the demons and shit. Ryujin being half demon I guess has to sacrifice himself in order to restore the power or something like that, and imae eventually knows that but he’s being “selfish” and doesn’t want him to follow his destiny. And the demons at the end of this chapter I think were antagonizing him so he could convince ryujin to follow his destiny and let the demon power get out of control and take over the world. But I could also be completely fucking wrong lmfao

Yes, you got most of it right. Ryujin is the perfect vessel for immortal ones (and demons) since he can store energy. The immortal ones want to depart to heaven (the ones who are still on earth, a lot of them already left a long time ago) using him as a vessel but that means he would become one of them and depart to heaven as well. So if Ryujin becomes the vessel, which is apparently his destiny, he'll have to leave Imae.
Demons and Immortal ones need divine energy to live. They call that divine energy "the sun" which seems to be the case because the places where there is a lot of energy from the sun are also the places with a lot of divine energy. Which also means that if there is no divine energy, the place will be very cold.
So when the traitor guy broke the sun mirror, he robbed its energy (the mirror is made from God's energy) that used to warm the earth which is the reason why it's now constantly winter. They try to restore the mirror because they basically don't want the world to freeze over.
However, the mirror was broken before by the four generals who stole most of the pieces, causing a long winter and the demons to become more powerful. Luckily, someone (the founder of the kingdom) managed to cast a spell with the remaining pieces of the mirror and seal the 4 generals away inside the mirror. It took a while but the mirror became whole again. The ministry kept the mirror in the hall of hidden mysteries, protected by a strong seal. Then the traitor (half-demon) broke it to free his boyfriend (one of the generals I assume).
By the way, the biggest problem is not that the story is confusing, but that she writes something early in the story and then expects you to remember it 20-30 chapters later even though it wasn't important for anything else in the story before that point.
