like with an alpha x alpha, its not just going to flat out be the same as alpha x omega, as you have to confront the gender norms and the beliefs plus the conflicts that would stem from it. maybe this alpha feels insecure for not being dominant, maybe this beta is used to be ignored and viewed as average, but secretly detests it, maybe this omega is bothered by the expectancy people have for it to be submissive, one of the biggest reasons why omegaverse is fascinating is the commonly written in exaggeration of the gender roles of alpha, beta, and omega, supported by the raw and animalistic features accompanied in the genders (marking, heat, ruts, scenting, pheremones ect ect which are also the other reason why this whole universe is so popular, its kinda hot)
most stories i, personally, read about omegaverses play these radical gender norms and beliefs out, although DEFINITELY not to say there arent ones where all genders are equally respected and not expected to fill out a role. in the omegaverse i usually read, and am more interested in (the one with, as stated before, exaggerated gender roles) it'd be interesting to see a bigger switch than just an omega whos feisty or an alpha whos actually nice to omegas. the conflict between omegas and the disrespect they get, i think ive seen it so many times im starting to see it in my dreams. itd be nice to have a different view of the conflict with the genders and the way society views them other than just from the common perspective of an omega uke who is treated badly by society.
maybe alpha x alpha is seen as a disgrace, or a pure socially acceptable and preferred pairing, maybe alphas who choose to mate with betas are seen as ridiculous, maybe omegas who are with other omegas are seen as pathetic idiots and that theres no way that their relationship would work out, maybe a beta and omega together is foolish, blah blah blah.
the reason i want a beta or alpha uke is actually more simple than all of this, though. its more so for the dynamics of their own respective mentalities that come from societal factors. and an even more simple but less relevant reason why they'd pique my interest, is the gap between their assigned gender and their personality and how the story would react to it.
did that make sense? i hope it did. anyways, if you prefer omegaverse stories where omegaverse isnt a really big thing and theres little to no sexism or real gender roles in play, then i guess the idea seems meaningless to you, but im thinking more of the 'We Live in A Society' omegaverses with the crazy views that are all based on something as simple as the sex a character was born as. sorry i made a whole essay! its just that your question was interesting. it helped me sort out my own thoughts

no, its for a new perspective.
in omegaverse works, there isnt much ideas added into betas, as they are, supposed to be just 'normal' people. an 'ordinary' worldview from people the least affected by secondary genders would pique my interest.
and as far as normal yaoi couples go, people have a thing for stuff as small as blonde ukes and black haired semes so i dont really see the problem in wanting a beta uke. i think the concept is more minuscule when you compare it to alpha ukes, but it still does intrigue me.
