I'm just as confused, but from what I'm understanding Ray asked for Lee to be kept out of commission basically, so they stabbed him and kept him in a... Parking garage it looks like? Anyway, then the grandfather took Soohyun to said parking garage and Soohyun then took out a knife to kill the people that work for his grandfather but then he got beat up. Now both Soohyun and Lee are just sitting there, beat up.
I could also be completely wrong, so that's also an option.

No Soohyun stabbed himself because Ray comes out when Soohyun is in danger so he's trying to force Ray out to hand over the jewel.
Does he? Oh, huh, I guess I was wrong then, at least for that part. Then where did the people go that were there with Soohyun? Did they just leave him after he stabbed himself, or did Ray come out and tell them where the jewel was and then they just left both of them? I mean, I still don't even know if the jewel actually exists because Ray told Lee it didn't, then told his grandfather it did (I thought he said it existed just to have bargaining power or something like that).

I mean can you imagine Jeju Island Arc being animated by UFOTABLE??! Personal opinion, They are the only top tier studio animation that could only pull it off without a doubt. Kimetsu No Yaiba episode 19 fight scene is enough proof.
Sis i agree with youuu on this one (* ^ ω ^) lots of studio production can try but UFOTABLE is in a whole another level when it comes to fighting scenes.
I mean trigger also has one of the best animations but I feel like the art style doesn't match with solo leveling, it's too soft and cute, but if the art was more shonen like then I would also vote for trigger to animate this master piece
