It's probably happening but it will imply more suffering for Kaneki (because he's really happy with his new life as Sasaki, he has friends and "parents").
He was lying when he said that, he did the holding his chin thing. I do think he is scared to find out the truth, but more because he is afraid it will break him and turn him into a monster, he doesn't know that his past self had a decent handle on berserk mode. The CCG is using him, and I suspect they have ever intention of killing him the moment he is no longer of use to them. He is their test ground for how humans handle the half-ghoul procedure. The CCG are not the good guys in this.
