I haven't read the novel, but I think the manga explained it a little. Scarlet armour is a title for a soldier in the knight corps for the one who wears bright red armour to get the attention of the monsters. They are the first people to go into a fight, and they are the ones with the most danger attached to their job, as they distract and hold "aggro" of the monster while the other members deal damage and kill the monster. Its basically the job youd have if you were bait with bloody meat attached to you....hope this helps!
