The prince is a lunatic, his pride is high and he sees others as pieces of chess (yeah, he's a genius, it was shown in the begging).
But he lacks when it comes to emotions. My guess is that the prince unconsciously knows he feels different with Luce, but he doesn't understand these feelings and it comes as obsession and jealousy (though the prince doesn't admit it's jealousy).
Because of this, the prince express his internal feelings as threats to Luce, like when he said "Don't even think of actually loving me".
Basically, the prince doesn't have a clue of his own feelings, he doesn't know what to do with these unkown feelings so he tortures Luce to gain his attention (since the prince can't make Luce laughs like when he saw him dancing with his friend, the prince gets Luce attention with the only way he knows, through treats and pain).
