Did they explain why the skeletons were feeling itchy, rash-like symptoms in the pax room?
If they didn't then I'm making it canon that the auto-healing ability is regenerating their flesh and we'll get 12 handsome men and or women. Amen
Since they're undead, it's more of a slowly harming them kind of thing. Treat it in similar to feeling heat from a flame when you get too close, it feels hot and the closer you get, the more uncomfortable until it begins to hurt you. In that same sense is how the auto-healing which is a trait under "holy" that would be destructive to undead elements. The knights are specters, which is a type of spirit that isn't alive. Healing is meant for the living. Undead may be dead brought to life, but it's a "cursed" life, so the healing for the living is registered as holy damage to impurity.
Even if we'd like the idea of them becoming human, sadly this isn't possible without an ability to create, rebirth/life, or able to change something. Maybe if someone pops up with an ability of this level, that would be cool.

They were all happy when when he was trying to kill orange hair outta no where, but turn the tables in a planned duel and all of a sudden it's a big deal. Considering Guwon is not human and the townspeople are scared of him and others knowing about their illness, it could be that Guwon can only eats people and that in return for protecting everyone, he eats the ones that are likely to die anyway? Seems a little far-fetched, but also it might explain the vomiting scene if he ate something normal during the day and his body can't digest it?
Nah I'm just speculating - him not being human hasn't been confirmed, just author is hinting to something in here. The fact that everyone's scared of him/act really weird, he doesn't know anything including very simple things people who grew up in society with would have known through social exposure, we never see him eat or drink, and I think once MC said he felt cold (i may be mis-remembering).
I'm just trying to figure out a way that rather than a human who's being a sneaky red flag, he's really just a non-human green flag
