Or it could be a glitch in the Novel ? Like.....suddnely because of the change in the character of latte, Ibelin's character is also changing ? Maybe their roles are reversing because latte is not exactly acting like how a side character should ? It also could be that this is a part of the author's experiment to see how the Novel turns out .
